TERROIR
North-facing slopes, approximately 300 m altitude, lacustrine limestone from the Oligocene and Miocene eras.
CULTIVATION
70-year-old Ugni vines with a touch of old Clairette; organic fertilizer; active promotion of biodiversity and enrichment of the microbiome. Certified organic by Ecocert.
HARVEST
Handpicked, between late August and mid-September.
VINIFICATION
Ugni 99%. Slow whole-bunch pressing at low temperature; indigenous yeasts, full malolactic fermentation. Aged for two years in amphora, without sulfur.
TASTING
Color: pale gold.
Nose: ripe yellow-fleshed fruits, dried fruits, hints of almond. Fresh attack, followed by an opulent palate with good length. Balanced between acidity and roundness.
13.5% vol.
PAIRINGS
Fish and seafood, asparagus, aged goat cheese.
