TERROIR
North-facing exposure; altitude of around 300 m; parcels planted on Eocene lacustrine limestone.
VINE GROWING
Vines aged between 50 and 70 years, cultivated with a biodynamic conversion approach.
Hand-harvested grapes between late August and early October; low yields, below 30 hl/ha.
WINEMAKING
Blend of 90% Rolle and 10% red Carignan.
Rolle vinified as a still wine and aged on lees in stainless steel tanks for 9 months, then blended with frozen Carignan must.
Sparkling obtained through bottle refermentation.
Alcohol: 11%.
TASTING NOTES
Appearance: pale white peach color.
Nose: white flowers, white fruits (pear, white peach), almond.
Palate: lively and zesty, with fine, thirst-quenching bubbles.
