Terroir
Miocene limestone and Eocene clay
Viticulture
Certified Organic by Ecocert; Carignan 60 years old; organic fertilizers; biodynamic preparations; promotion of biodiversity and enrichment of the microbiome.
Harvest
From mid to late September.
Vinification
60% Syrah, 25% Carignan, 15% Cinsault. Syrah 50% destemmed, Carignan whole clusters, Cinsault semi-carbonic maceration. Native yeast. 6-month aging in concrete thank. No fining. SO2 level well below biodynamic norms. Light filtration before bottling. ABV 12.5%
Tasting Notes
Ruby-violet color.
Generous nose of crunchy red fruits, raspberry, with vegetal fruity notes expressing whole-cluster vinification. Light, fresh, and zesty palate.
Food Pairing
Roast poultry, tapas, charcuterie, grilled vegetables, pasta with pistou, or small goat cheeses.
